There’s something really special about Boston’s Trillium Brewing Company, and I think it starts with owners JC and Esther Tetreault. The two opened Trillium in 2013, but it was their wedding that might have inspired the whole thing. When the couple got married in 2009, JC had already been a serious home brewer for a few years. Their beers were so good, that the Tetreaults decided to serve three of them at their Stonington, CT wedding, complete with hand-drawn labels by graphic designer and friend Kevin Cimo. The wedding went great, and just a few years later, Trillium was born. By the way, Cimo still hand-draws every new label design at Trillium.

The Dialed In Double IPA with Pinot Gris Juice tastes like every bit of love the Tetreaults have for each other was put right into the can. Like most New England IPAs, it’s wonderfully hazy and golden in color. The pinot gris juice shines through the floral and tropical hop flavors, giving it a little flare of white wine that made me feel like the actual adult I’m supposed to be. Wowsers.
