Some days, I like to build a fort on my Windowsill.

There’s a lot to love about the Fort from Dogfish Head Craft Brewery. First, it’s made specifically for cellaring. “Grab a few bottles, enjoy one now and lay the others down for a few years.” Mine was either bottled in 2015 or 2016 (the bottled date was smudged!). Second, the label, which is designed by Tara McPherson, is beautiful. Third, the intense raspberry flavor makes it perfect for pairing with food—like chocolate, cheese or even duck. It’s definitely more of an experience beer than most.

The base beer is a Belgian ale, which is then fermented with over a ton of pureed raspberries and lots of raspberry juice. All that fruity fermentation not only boosts the aroma and flavor, but turns the Fort into a true ass-kicker with a 18% ABV. My wife had this one with dinner, allowing me to take a few tastes, and I’ll tell you… it felt like I was hit with a raspberry hammer. Wow! Do not operate any heavy machinery after sipping on this brew. Just hunker down in your fort and let the drunken fun wash over you. Delicious!
