The windowsill always seems to find me, even when I’m out and about.
One cool thing about this English brewery is that they have no problem crowdfunding their projects. In fact, they’re currently using @crowdcubeteam to fund their second brewery, and have pulled in almost €2 million from over 2,000 investors. Created in 2012 by friends Brett Ellis and Andrew Cooper, they pride themselves in “using barrel-aged wild fermentation to create complex flavours.”

The Evolver is named that because the Brettanomyces yeast used in the fermenting process continues to do its work as the beer ages. If you taste it within the first few months, it will taste like a pale ale. If you have it six months later, it will taste different. I’m not sure when the one I had was bottled, but it was tropical, hoppy and just wild enough to be perfectly refreshing. Thanks to @rothbardct for the window sill, and the delicious lunch!
